Date Halwa / Khajoor Halva

Ingredients
1/2 kg Dates (without seed)
1 cup Semolina
1/2 cup Sugar
1/2 cup Oil
3 table spoon Honey (Optional)
250 g Khoya (Click to view recipe)
50 g Almond
50 g Pistachio
1/2 cup Water
1.5 cup Milk (For recipe 2)
1 Liter Milk for making Paneer (Fresh Cheese) (Optional for recipe 2)

Recipe 1
1. Take oil and fry dates in it.
2. In other pan put 3 table spoon oil and put semolina in it. Cook it till semolina gets light brown / golden and start giving nice smell.
3. Mix dates and semolina and cook them for sometime till they get mixed with each other.
4. Add sugar and keep cooking till sugar is completely dissolved.
5. Now add honey and cook more when honey is dissolved add some water in it. (If honey is not available then taste sugar and add more sugar)
6. When water is almost dry add almond and pistachio in it and cook to mix them well.
7. Add khoya and water in it and cook till all the khoya is mixed in it.
8. Garnish it with khoya and serve.

Recipe 2 (If you don’t have khoya then follow this)
1. Take oil and fry dates in it.
2. In other pan put 3 table spoon oil and put semolina in it. Cook it till semolina gets light brown / golden and start giving nice smell.
3. Mix dates and semolina and cook them for sometime till they get mixed with each other.
4. Add sugar and keep cooking till sugar is completely dissolved.
5. Now add honey and cook more when honey is dissolved add half cup milk in it. (If honey is not available then taste sugar and add more sugar)
6. When milk is almost dry add almond and pistachio in it and cook to mix them well.
7. Add Paneer (Optional Step but it will improve taste a lot) and cook till it is mixed well.
8. Taste sugar and add half cup milk in it and cook till all the milk is completely dry. Now taste sugar again (add, if needed) and mix rest of milk and cook till milk is dry. Cook a little more and make halwa more dry but not much.

Note:
1. You may use paste of date or take dates and remove their seeds. Chop the dates into very small pieces. Dates shall not be hard one
2. Use the cup of medium size for measuring.
3. When following recipe 2 sugar taste will decrease a lot, so taste it regularly.
