Chicken Cannelloni Pasta

Step I – Pasta
Ingredients
½ all purpose flour
5 eggs

Preparation

  1. Knead the dough and use pasta machine to make large pasta strips of medium thickness. Cut the strips into 6” inches strips.  If the dough is softer than the required one, make the strips and leave them for a while.
  2. Boil the pasta with some oil in water.
  3. Wash the pasta with cold water to remove starch in it.

Step II – White Sauce
Ingredients
½ cup Oil + Butter
½ cup all purpose flour
1½ liter Milk
Salt to taste
½ Teaspoon White Pepper
1 Tablespoon Chicken Powder
1 Teaspoon Oregano

Preparation

  1. Warm the milk and mix white pepper, oregano, and chicken powder in it. Cook it for a while and put it aside. We will call it flavored milk.
  2. Melt the butter in a fry pan. Include the oil in it also.
  3. When the mixture of oil and butter are warm, include all purpose flour and cook it. After sometime the flour will change its color and give aroma. When its very light brown, it is ready.
  4. Pour flavored milk in it and keep stirring with the help of a whisk.  When the desired consistency is achieved, remove it from heat. (Note: it should be rainy not very thick).

Step III – Stuffing
Ingredients
½ cup Oil + Butter
4 Tablespoon Onion – Fine Chopped
2 Tablespoon Garlic – Fine chopped
2kg Spinach – Boiled – Chopped
½ Tablespoon White Pepper
Salt to taste
¼ cup Chicken boneless – Julianne
1 cup White Sauce
¼ cup Cheddar cheese (Optional)
¼ cup Mozzarella Cheese (Optional)

Preparation

  1. Boil the Spinach. Wash it with water and chop it and put aside.
  2. Heat the oil and butter in a wok. When they are ready put onion in it and fry them until they are light brown/golden.
  3. Now include garlic in it and make it light brown also. Be careful that onions are not burnt.
  4. Now put spinach in it and cook it. Cook the spinach very well. The more you cook, more it will be tasty. Keep it moving constantly.
  5. When the spinach is half cooked, sprinkle salt and white pepper. (Be careful that you don’t sprinkle salt in start).
  6. Sprinkle the salt and white pepper in 3-4 batches after some gap.
  7. When spinach is done, pour white sauce in it and keep cooking until it releases its oil.
  8. When the oil is released, spinach is ready.

Step IV – Cannelloni
Ingredients
Pasta Strips
White sauce
Stuffing
¼ cup Cheddar cheese (Optional)
¼ cup Mozzarella Cheese (Optional)

Preparation

  1. Spread the white sauce in a baking pan.
  2. Put the pasta strip on a board, put stuffing on it, roll it and put the tube/roll on the backing pan. Be careful that no oil from stuffing should come.
  3. When the backing pan is full of cannelloni, spread the white chicken sauce on cannelloni.
  4. Spread mixture of mozzarella and cheddar cheese on it .
  5. Bake until the cheese turns golden.
