Chocolate Éclairs

Step I
1/2 cup Water
1/4 cup Butter, cut into cubes
1 pinch Salt

  • Combine all ingredients in a sauce pan and bring to boil.
  • When the liquid starts boiling, remove it from the heat.

STEP II
1/2 cup Flour – sifted

  • Add all the flour into liquid in one batch.
  • Move and mix with a spoon until a smooth ball is formed.
  • Let it cool for 5 minutes.

Step III
3 Eggs

  • Add eggs into the ball one after another (add 1 egg at one time) and whisk. Keep whisking until the mixture is smooth and glossy.

STEP IV

  • Fill the mixture into a piping bag or use a spoon to put the mixture on a greased (or with a baking paper) baking tray in a round shape.
  • The recommended size is 4 inch diameter and 1.5 inch height of each éclair.
  • Bake at 200C for 25 to 30 minutes until they raised properly.

STEP V
1 – 2 cups Whipped Cream

  • Take out of the oven.
  • Slice from the center or little bit high and scoop out the dough from the center and let it cool.
  • Fill the empty dough area with whipped cream and place the second half on the top of it.

STEP VI
100 ml Chocolate – melted
Few drop – Oil

  • Mix the oil into melted chocolate.
  • Drizzle the melted chocolate over the éclairs.
  • Refrigerate for 30 minutes.

Chocolate Saucy Pudding

STEP I:
70ml Oil
120g Brown sugar
2 Eggs
1/2 Teaspoon Vanilla
50g Flour
2 Tablespoons Cocoa
3Tablespoons Milk

  • Mix all ingredients in a bowl and whisk for 3 minutes.
  • Pour into a greased baking pan or ovenproof glass dish.

STEP II:
60g brown sugar
2 Tablespoons Cocoa
6 Tablespoons Hot water

  • Mix all ingredients well in bowl.
  • Pour on top of mixture in pan.
  • Place pudding pan inside another pan half filled with water.
  • Bake in preheated oven at 170C for 25 to 30 minutes till top is baked. Bottom should stay moist.
  • Serve warm with ice cream.

Chicken Tikka Pizza II

Bake at 250C for 10 to 12 minutes.

Pizza dough:
1 kg, all purpose flour.
250g Semolina
25g Sugar
20g Salt
50ml Oil
20g Yeast
5g Bread Improver
500ml Water – Room temperature

Preparation

  • Mix all ingredients except flour and water.
  • Add a little water to make paste like texture, keep mixing for 5 minutes.
  • Add all the flour. Keep adding until the dough is ready.
  • Add a little water to make the soft dough.
  • Keep kneading for 8 minutes until soft and smooth dough is formed.
  • Put the dough in a greased bowl and brush oil on the top of the dough.
  • Cover with plastic wrap and let it rise 30 to 45 minutes.

Pizza Sauce

2 cloves Garlic – chopped
250g Tomatoes – diced
1 Tablespoon Oil
1/2 teaspoon Sugar
1/2 teaspoon Vinegar
1/2 teaspoon Salt
1/2 teaspoon Black pepper

Preparation

  • Mix all the ingredients and blend all the for 1 min.

Chicken
Boneless chicken – cubes
1/2 teaspoon Salt
1 Tablespoon Tandoori masala
1/4 Tablespoon Crushed red chili
1/2 Tablespoon Oil

Preparation

  • Marinate the chicken half an hour, bake at 250C, 15 to 20 min

Dough scale

  • For a small pizza 6 inches: 150- 180g.
  • For a medium pizza 10 inches: 250g – 280g.
  • For large pizza 13 inches: 500g.

Pizza Topping

1 large Onion – Sliced
2-3 Tomatoes – Sliced

Pizza Preparation

  • Take dough according to the required weight and roll out with flour and rolling pin according to the pan size.
  • Grease the pan and place the dough in the greased pan.
  • Prick the base of the pizza with a fork
  • Using spatula spread the pizza sauce, a layer of cheese, and all remaining ingredients.
  • Spread the cheese at the top so it covers completely and bake.
