Chili Lava Cheese Sauce (For Lava Burger)

Ingredients
1/4 cup Oil + Butter (or only Butter)
1/4 cup all purpose flour
500ml Milk
300ml Cheddar Cheese
1/2 Teaspoon White Pepper
1/2 Teaspoon Black Pepper (crushed)
1-1.5 Teaspoon Chili flakes
1 Tablespoon Chicken Powder
1 Teaspoon Oregano
1/2 cup green Paprika (chopped)
1/2 cup red Paprika (chopped)
1 pinch yellow color

Preparation

  1. Melt the butter in a saucepan. Include the oil in it also.
  2. When the mixture of oil and butter is warm, include all purpose flour and cook it on a medium high heat. After sometime, the flour will change its color and give aroma. When it’s very light brown, it is ready.
  3. Pour 1/3 milk in it and keep stirring with the help of a whisk. Add 1/3 milk more and keep stirring. Now add remaining 1/3 milk and keep stirring. (You may need to remove it from heat for stirring occasionally).
  4. Include yellow color, cream and spices and keep cooking.
  5. Include cheese and paprika and keep cooking. When the desired consistency is achieved, remove it from heat. (Note: it should be runny, not very thick).
Lava Sauce poured over a burger.

Tamarind Sauce

Ingredients
1 cup Tamarind pulp (Or Michelles Imli Sauce)
2 No Tomatoes (cut into 4 pieces)
1 Bunch of Mint Leaves
3-4 No Green Chilies (can be increased or decreased according to taste)
4 Tablespoon White Vinegar
1 Tablespoon crushed Red Chili
Salt to taste
½ Tablespoon Cumin Seeds

Preparation

  1. Put all the ingredients in blender and blend them well.
  2. Remove from the blender and refrigerate it at least for 30 minutes.

Butter Scotch

Ingredients
100g Sugar
100g Brown Sugar
2 Tablespoon Butter (Unsalted)

Preparation

  1. Mix white and brown sugar and melt them in a non-stick frying pan.
  2. Sugar can be melted first on the high temperature and then on the medium temperature.
  3. When the desired consistency is achieved (pick the liquid with a fork and it should create a wire); add butter. Mix well.
